Sausage and Mashers
Serves 6
Ingredients:
2.5 lbs small Yukon Gold potatoes
salt
1 tspn olive oil
1 large sliced onion
1 tspn sugar
1/2 tspn dried thyme
2 tbs all purpose flour
1.4 cups vegetable broth
1/3 cup red wine
8 oz Irish sausage links
1 cup milk
1 tspn butter
Bring large pot of water to a boil. Boil potatoes until tender. Heat oil in saucepan over med-high heat. Add onion, sugar, thyme and cook, stirring often, until onions are softened. Stir in flour and cook stirring continuously. Slowly add vegetable broth stirring constantly until gravy thickens Add sausage to gravy and simmer 20 minutes. Add warm milk and butter to drain potatoes and roughly mash to desired consistency. Top potatoes with sausauges and gravy. Serve immediately.
